How to Brew Chinese Tea

There is no single correct way to brew tea. Start here, then adjust to taste.

GONGFU STYLE

WESTERN STYLE

Oolong

Start around 90–95°C. Use slightly cooler water for greener, lightly oxidized oolongs and hotter water for darker or roasted styles. Keep the first infusion short, then adjust to taste.

Raw Pu-erh

For younger raw Pu-erh, start around 90–95°C and use short infusions. Older raw Pu-erh can often take water closer to 100°C. Lower the temperature or shorten the steep if bitterness becomes too strong.

Ripe Pu-erh

Use water close to 100°C. Rinse briefly if you prefer, then brew in short infusions and extend gradually as the leaves open.
